Chinese Cole Slaw

I have a great summer recipe…one that will stand up in this heat. What heat you say…oh, it was 105 here yesterday. Oh My God. And I am blaming that heat for the lack of an image of  this recipe. A girl I worked with ages ago would bring this to the company pot luck events. It is a great alternative to the traditional cole slaw.

Chinese Cole Slaw:

1 16oz pkg coleslaw

1 pkg chicken ramen noodles – dry and crushed

4 chopped green onions

2 tbs sesame seeds (toasted in a dry pan until slightly browned)

½ sup sliced almonds (toasted in a dry pan until slightly browned)

Dressing:

3tbs sugar

½ c salad oil

3 tbs white vinegar

1 tsp salt

½ tsp pepper

flavor packet from noodles

Combine all salad ingredients and top with mixed dressing.

Wow. I really wish I had a picture….and/or a bowl of this to eat today. Maybe for 4th of July….

    How funny, I’m having a major cole slaw moment lately. Worked on a recipe last week for another blog and can’t stop eating it now. I love it with peanuts too. Um, yum. Now I’m hungry.

    This sounds super yummy…and seems pretty easy. Even someone with my limited cooking abilities should be able to handle this!! Or i can just wait until you come visit and you can whip it up for me :-)

    I would like to eat this. I wonder if rice noodles would work. Tomorrow I’m off to Canada to try not to eat 1386 bags of ketchup chips in 4 days. Wish me luck.
