I am all about easy in the mornings. Usually I am a bagel with peanut butter or a greek yogurt kind of gal. I wanted to attempt more eggs…but I needed an easy way to do them. I read several recipes for egg muffins…wow that name stinks. Egg cups? Baked eggs? Whatever. Anyway, you bake them and just reheat them. So far I have reheated them twice and they are perfect. I heat them in the microwave and then mind of chop them up with my fork so it has more of a scrambled egg look to it. I baked mine a bit long so they have kind of a crust on the outside, but it isn’t offensive. Best of all…each one is 58 calories, 7.4g protein. For one! I ate 2 each day with some salsa – so I was at about 150. One Fifty!!!! Sold. Next I want to try different fillings.
3 tbs egg whites
1/4 cup black beans
1 Tbs dived Red pepper
2-3 spinach leaves torn into pieces
Spray the muffin tin, fill each and mix with a spoon. Bake at 400 for 15 min or until done.
