I like my sugar with coffee and cream…

I drink my coffee with cream and sweetener. I’m not that picky – milk or cream is fine and at home I use the coffee creamer crap that is flavored. I know, I know – it is bad for me. And I use use Splenda. I have considered trying almond milk or soy milk and trying to change to a different sweetener like Stevia, but up until today I hadn’t done any of it.

Yesterday my friend Jess told me about this coffee that her trainer had told her to try. Background – Jess is my coach at Pride MMA and my friend. She is the Super Light Weight IKF World Champ, and this summer she will fight again and again be named the champ. She trains all year long, but right now she is kicking her training into high gear. Enter Luke from OK Strength. Luke is someone else I have trained with and someone who knows their heath/work out/body care stuff. Anyway…..

Luke said to try coffee with coconut oil. He also wants us to add grass fed butter to it, but I am going with the oil for now and the butter I can try later – maybe. Baby steps. Anyway, he said we could add some protein powder to it (vanilla or chocolate) to give it some body and flavor, and that if we had to sweeten it, a bit of Stevia would be ok. He said that if we drank this it would keep us full, and do so in a way that allows us to burn fat during our work out. I am not at all a person who can explain this crap, but basically – if you eat carbs and then work out, you burn those carbs. I have been trying to eat protein in the morning instead of carbs, but this is even better.

Jess tried it yesterday and it looked like an oil slick and made her feel like she was applying chapstick with each sip. I was skeptical. But she drank it and stayed full most of the day. And that was post work out. After reading those links I just listed I decided I would give it a go but add the blending step.

I kid you not…it is GOOD. This is a girl who can’t drink coffee at fancy coffee places with strong coffee and no artificial sweetener because real sugar doesn’t make it taste how I like it and someone who really does love a flavored creamer.

Here was what I did:

1 cup of coffee

1/2 tbs coconut oil (I will try and increase it next time maybe up to 1 tbs. I was being cautious at first)

1/3 scoop of vanilla protein powder

1 packet of Stevia

Blend and drink.

The blending helps suspend the oil in the coffee. I need to try it un-blended because let’s be real, the idea of hauling out the blender every morning isn’t one I am digging. I should wait and post this later so I can report how long it keeps me full….but I have a few peeps on Instagram asking so I am posting now. Today I drank it post work out. Tomorrow my plan is to try it in the morning and then work out and see how it goes. I’ll let you know how that works out for me.

Chia Seed Pudding

It started with seeing this Pin a while back…and then again and again until I finally took notice.

Chia Seed Pudding. Every recipe I read said it was similar to tapioca. I decided to base mine off this recipe by An Edible Mosaic. Mine was good, but did not look as pretty as her serving does!

I used almond milk and some agave along with the cinnamon and vanilla. I made it last night and only had time for it to set up for 2 hours. It was a bit loose but still really yummy. I made another batch this morning and am eager to see what it is like after chilling all day.

Why Chia Seeds? They are a good source of fiber, Omega 3 Fatty acid and protein. They are one of these fad super foods that seem to get everyone’s attention. A fad maybe, but an ancient seed that was a staple for the Aztecs. I also know you can add these things to smoothies as well as leave them dry and crunchy and toss them on salads. Think of them like a poppy seed in texture in the dry form, and when plumped with liquid they are much like a tapioca pearl.

And yes, the Chia pet jingle in stuck in my head too…..

Photo Canvas

Many of you have seen in Instagram that I am transferring a bunch of old pics onto canvas. I am using this technique that I found on A Beautiful Mess. She has a great tutorial and FAQ so I am not going to reinvent the wheel…I am just sending you there to read about it.

A few notes…

I picked this over just using mod podge on top of a copy because reading about it this one was said to show more of the texture of the canvas.

There is a technique out there where you print on tissue paper and then mod podge that, but running tissue through a printer seemed sketchy.

The smaller the canvas the easier it is…not just because there is less work – the canvas is stretched tighter so rubbing off the paper without hurting the image is easier.

I would only do this if you are wanting the distressed vibe. For this project it works, but even then I had one pic distress so badly that I had to redo it.

Don’t be me and pick a project where you have 30+ images to do. I am giving myself carpel tunnel, and a headache, and making a mess.

I can’t show you the final pics until we move and hang them all. In the old house we had all these images  all family, framed and hanging in a powder room. Same will happen in the new house minus the frames. The oldest pic in the group is my great, great, great grandmother. Pretty cool huh?

The West Wing

I started re-watching the West Wing….again. I can’t fully commit to it again since RBB is of the, “I liked it, but once was enough” camp. While he was gone last week I averaged 3 episodes a night. That sounds pathetic doesn’t it. Oh well.  Anyway….this passage from one of the episodes that suck with me. It’s just good.

The context doesn’t matter much, but for those of you who will go crazy trying to place it (Estelle, Amanda, -R-) it is from Take This Sabbath Day. Jed is given the opportunity to reverse a death penalty decision and doesn’t. He speaks to Father Cavanaugh at the end and this is the story he is told.

You know, you remind me of the man that lived by the river. He heard a radio report that the river was going to rush up and flood the town. And that all the residents should evacuate their homes.

But the man said, ‘I’m religious. I pray. God loves me. God will save me.’

The waters rose up. A guy in a row boat came along and he shouted, ‘Hey, hey you! You in there. The town is flooding. Let me take you to safety.’ But the man shouted back, ‘I’m religious. I pray. God loves me. God will save me.’

A helicopter was hovering overhead. And a guy with a megaphone shouted, ‘Hey you, you down there. The town is flooding. Let me drop this ladder and I’ll take you to safety.’ But the man shouted back that he was religious, that he prayed, that God loved him and that God will take him to safety.

Well… the man drowned. And standing at the gates of St. Peter, he demanded an audience with God. ‘Lord,’ he said, ‘I’m a religious man, I pray. I thought you loved me. Why did this happen?’

God said, ‘I sent you a radio report, a helicopter, and a guy in a rowboat. What the hell are you doing here?’

I think this is a great story. My views on religion….well…let’s not go there. But I will say that I am of the “god is in everything” area and so I appreciated this story (I am also not very religious  so posting this is kind of odd). We all need to remember  that we must some what control our own destiny. That even if you are a person who believes God has a plan…you aren’t just a bystander. You need to live life. Make decisions. 

And while we are talking West Wing (Season 1)…..Sam’s speech to Malory in Episode 1 is still a classic, Mandy bugs the crap out of me (but I loved her in Cutting Edge – Toe Pick), Mrs. L talking about her sons makes me cry and Donna and Josh hugging after he gives her a present for Christmas makes me want to watch the final season…bad.

Brussels Sprout Salad

On of my favorite salads is the brussels sprouts salad from The Wedge in OKC, but it is not always on the menu. This week I decided to make my own. For the dressing I combined Dijon mustard, maple syrup and red wine vinegar. That dressing on thinly sliced raw sprouts with a few sliced sun dried tomatoes. It was perfect and I will for sure make it again. I know this isn’t an earth shattering recipe to share…but for those who like sprouts it is yummy and you should make it.

Wise Words

My dear friend Estelle wrote a post today that hit home. She talked about a time when blogging was fun, and about the things that have made many of us recently shy away from blogging – myself included. I realized that my blog images weren’t perfectly lit and sized. I became ultra conscious of my typos and mistakes. I started feeling like anything and everything I posted wasn’t original enough. So I stopped for the most part. In stopping I have lost, or limited, my connection to the wonderful and amazing people who I have met through blogging. I miss them. I miss reading their blogs (many of them have limited their posting as well) and I miss their comments on mine. Thank you Estelle for such a great post today. It is a reminder to me of what this blog is…or should be. I am not in this to make millions (hahahahahah) and I am not in this to be become a published author or any of that. It is just my corner of the world that I share with some friends. While instagram pics and screen shots of what shoes I am coveting might not gain me 1000 readers a day, it will allow me to connect with the friends I have made who live all over the US who visit this space.

Thanks Stella. You once again spoke to me through your post. And let’s not even talk about your amazing trip! Miss seeing you in person as much as I have missed reading your posts.

Shoes

Did you see the lovely Kendi today? She is rocking some amazing Seychelle shoes. One of my favorite brands. I rocked them this weekend too….wait, no I didn’t. I wore these from Target that I got on sale for $20!! Funny thing, even Kendi linked to the Target ones. They are a dead ringer. Go buy some!

Bedding

I haven’t posted much about the new house on here, but if you follow me on Instagram you know that we are up to the HVAC stage. So to me that means time to buy new bedding….too soon? Yea, maybe I should have waited on sheet-rock  Anyway…

It started with this duvet from Restoration Hardware. And I can’t seem to get an image of it that I can post. It is medium grey and soft. It feels like a blanket verses a typical duvet cover. I love it. I am pairing it with white sheets and this Organic Cotton Blanket from Target.

I am thinking I will paint the wall behind our bed either a darker or lighter grey than the duvet. Any opinions? I would also love to find a patterned yellow pillowcase to use. We aren’t very formal…I am not one to make the bed with a gazillion of pillow that need to be taken off. I like to use 2 pillow for each side but have them be ones we sleep with. I also “make” my bed where the comforter is folded half over so the blanket is visible…hence the pretty blanket. Right now I have a set of “love” pillow cases that we use that Melissa gave me. The light blue writing might look great with the yellow.

The Work Out Hair Solution

As you know I chopped my hair this week. And as you may also know, I have long complained that headbands don’t stay on my head…they roll. I now have the solution. The golden ticket. All thanks to America’s youth. Apparently kids these days use pre-wrap. That stuff I wrapped my shins in before I put the tape on them, way back in my high school track, endless shin splint days.

You can buy it at any sports store for about $5 a roll. Tear off a length….handy tip: tie it around your thigh and then roll it off. Unroll the part that has become bunched up and put it on your head. It does not budge. I swear to you. Not at all. I wore it during my KO class last week and twice now doing Insanity. And this is with short hair that is begging to break free from the rubber band…but this stayed. And at the end of your work out…toss it and make a new one next time.

Placemats

The other day RBB’s cousin mentioned that her kids fight over the same plastic placemat every meal. Their birthdays are coming up, so as part of their gift we did some crafting.

I printed out their names and then used the old school way of tracing…..I colored the back with pencil and then traced from the front. Do you remember doing that as a kid? Then I outlined in black sharpie and together we colored the rest of the mat. I then encased them in clear contact paper. Perfect? No. But personal. I hope they love them.
